Abstrak
ABSTRAK Nama : Maria louisa Rumateray Program Studi : Kajian Administrasi Rumah sakit Judul : Faktor-faktor yang mempengaruhi pelayanan gizi di instasi gizi RSUD Wamena sesuai Pedoman Pelayanan Gizi Rumah Sakit Pembimbing : Dr.Dra.Dumilah Ayuningtyas,MARS. Kegiatan pelayanan gizi yang baik di Rumah Sakit harus terorganisasi dengan baik dan didukung oleh sumberdaya manusia, sarana dan prasarana, penganggaran, kebijakan dan prosedur pelayanan yang benar. Kegiatan pelayanan gizi di Rumah Sakit meliputi pelayanan gizi rawat jalan, pelayanan gizi rawat inap, penyelengaraan makanan, penelitian dan pengembangan. Dari empat kegiatan pelayanan gizi di rumah sakit ternyata yang di lakukan hanyalah dua pelayanan yaitu pelayanan gizi rawat jalan dan penyelengaaraan makanan, karena keterbatasan waktu maka fokus penelitian saat ini hanya melihat tentang proses penyelenggaraan makanan yang kegiatannya meliputi perencanaan menu, pengadaan bahan, penerimaan dan penyimpanan, persiapan dan pengolahan makanan, distribusi makanan, penyajian makanan. Permasalahan yang terdapat di instalasi gizi adalah proses penyelenggaraan makanan belum berjalan sesuai dengan Pedoman Pelayanan Gizi Rumah Sakit. Penelitian ini merupakan jenis penelitian kualitatif. Informan dari penelitian ini yaitu Direktur, kepala bidang penunjang, kepala bidang instalasi gizi, kepala bidang perencanaan dan umum, kepala sub bagian keuangan ( bendahara pengeluaran) juru masak dan pramusaji. Pengumpulan data dilakukan di RSUD Wamena pada bulan April sampai dengan Juni 2019 dengan cara observasi, wawancara mendalam dan penelusuran dokumen. Analisis data dilakukan secara deskriptif kulitatif dan untuk menjamin validitas data dilakukan teknik triangulasi. Hasil penelitian menunjukkan bahwa penyelengaraan makanan di instalasi Gizi RSUD Wamena telah mengunakan Pedoman Pelayanan Gizi Rumah Sakit (PGRS) 2013, tetapi dalam pelaksanaanya panduan tersebut belum sepenuhnya di implementasikan. Good nutrition service activities in hospitals must be well organized and supported by human resources, facilities and infrastructure, budgeting, policies and correct service procedures. Nutritional service activities at the Hospital include nutrition outpatient services, inpatient nutrition services, food administration, research and development. limited time, the focus of the current research is only to look at the process of food administration whose activities include menu planning, material procurement, receipt and storage, preparation and processing of food, distribution of food, presentation of food. The problems found in nutrition installations are that the process of organizing food has not been carried out in accordance with the Hospital Nutrition Service Guidelines. This research is a type of qualitative research. The informants from this study were the Director, the head of the supporting field, the head of the field of nutrition installation, the head of planning and general affairs, the head of the sub-section of finance (treasurer of expenditure) the cook and waiter. Data collection was conducted at Wamena General Hospital in April to June 2019 by means of observation, in-depth interviews and document tracking. Data analysis was carried out in a descriptive manner and to ensure data validity triangulation techniques were carried out. The results showed that the organization of food in the Nutrition installation of Wamena General Hospital had used the 2013 Hospital Nutrition Service Guidelines (PGRS), but in its implementation the guidance had not been fully implemented.
