Abstrak
Program Makan Bergizi Gratis (MBG) melalui Satuan Pelayanan Pemenuhan Gizi (SPPG) di Kota Bogor melayani lebih dari 115.847 penerima manfaat setiap harinya. Penyelenggaraan pangan skala besar tersebut meningkatkan risiko cemaran mikrobiologi apabila higiene sanitasi dapur tidak diterapkan secara optimal. Penelitian ini bertujuan menganalisis hubungan higiene sanitasi dapur dengan cemaran Escherichia coli pada nasi di SPPG Kota Bogor Tahun 2025. Penelitian ini menggunakan metode observasional analitik cross-sectional dengan memanfaatkan data sekunder hasil inspeksi kesehatan lingkungan dan pemeriksaan laboratorium dari Dinas Kesehatan Kota Bogor pada 30 sampel SPPG. Hasil pemeriksaan laboratorium menunjukkan 33,3% sampel nasi positif cemaran E. coli. Pada sembilan variabel yang diuji, terdapat tiga variabel yang tidak memenuhi syarat, yakni fasilitas sanitasi (97,3 % yang memenuhi syarat), penyimpanan pangan matang (30% memenuhi syarat) dan penyajian pangan (80% memenuhi syarat). Analisis bivariat menggunakan uji Fisher's Exact Test yang menunjukkan tidak terdapat hubungan yang bermakna secara statistik antara fasilitas sanitasi (p=1,000; OR=2,111), penyimpanan pangan matang (p=1,000; OR=1,000), dan penyajian pangan (p=1,000; OR=1,000) dengan cemaran E. coli pada nasi, sedangkan enam variabel lain tidak dapat dianalisis karena hasil pengukuran variabel-variabel tersebut telah memenuhi syarat sehingga tidak terdapat variasi data. Penguatan pengawasan terhadap penyimpanan pangan matang di SPPG perlu diprioritaskan guna menekan risiko cemaran mikrobiologi secara berkelanjutan pada penyelenggaraan Program MBG.
The Free Nutritious Meals Programme (MBG), delivered through the Nutrition Fulfilment Service Units (SPPG) in the City of Bogor, serves more than 115,847 beneficiaries every day. This large-scale food distribution programme increases the risk of microbiological contamination if kitchen hygiene and sanitation are not optimally maintained. This study aims to analyse the relationship between kitchen hygiene and sanitation and Escherichia coli contamination in rice at the SPPG in Bogor City in 2025. This study employed a cross-sectional analytical observational method, utilising secondary data from environmental health inspections and laboratory tests conducted by the Bogor City Health Department on 30 SPPG samples. Laboratory test results showed that 33.3% of the rice samples tested positive for E. coli contamination. Of the nine variables tested, three failed to meet the required standards: sanitation facilities (97.3% met the requirements), storage of cooked food (30% met the requirements) and food serving practices (80% met the requirements). Bivariate analysis using Fisher’s Exact Test showed that there was no statistically significant association between sanitation facilities (p=1,000; OR=2,111), the storage of cooked food (p=1,000; OR=1,000), and food serving (p=1,000; OR=1.000) and E. coli contamination in rice; however, the other six variables could not be analysed as the measurement results for these variables met the criteria, meaning there was no variation in the data. Strengthening supervision of cooked food storage at SPPGs should be prioritised in order to sustainably reduce the risk of microbiological contamination in the implementation of the MBG Programme.
