Hasil penelitian didapatkan hasil bahwa prilaku penjamah memenuhi syarat sebesar92,86, tpm yang memenuhi syarat sebesar 57,14% , cara pengolahan makanan yang memenuhi syarat sebesar 92,86%, peralatan makanan yang memenuhi syarat sebesar 100%. Hasil uji laboratorium didapatkan hasil usap tangan positif dan makanan yang positif e. coli sebesar 16,7%.
Hasil penelitian menyarankan kepada pengelola kantin melakukan pemeriksaan lebih lanjut terhadap makanan dan air besih, melakukan pelatihan terhadap penjamah, dan menciptakan lingkungan yang mendukung praktik higiene sanitasi makanan. Kata kunci: makanan, kontaminasi, higiene, sanitasi, e. coli
Human need for food is one of the key issues initiated by the un in the indicators of achievement of sutainable development goals (SDGS). Food is a source of life for humans and can also be a source of health problems. This research uses descriptive research method. Data collection using interview method, observation, and laboratory testing.
The result of the research showed that the behavior of eligible handlers was 92,86%, eligible fulfillment requirement was 92,86%, eligible food appliance was 100%. Laboratory test results obtained positive hand swabs and e. coli positive foods oF 16.7%.
The results suggested further examination of food and water, training of handlers, and creating environments that support hygiene practices food sanitation. Key words: food, hygiene, sanitation, contamination, e. coli
Snack food holds an important role in providing energy intake of nutrition for children of school age. In the neighborhood around the school a lot of good common snack food provided by the school cafeteria and vendors and generally regularly consumed by most children of school age. The purpose of this study was to determine the quality of the analysis of snack food with chemical and biological contaminants in snacks in elementary school. Variables examined in this study include characteristics of food handlers, including education, knowledge and behavior variables sertta support such as sanitary facilities which include sanitary place to sell and sanitation tools. This study used a cross-sectional design (cross-sectional). With a sample of 30 food handlers and food snacks in six primary schools in the region point Cipinang Besar Utara. Results from this study indicate that snacks are not eligible (containing a food additive) as much as 27 snack foods, while foods containing E. Coli A total of 10 food. Keywords: E. Food poisoning is becoming one of the biggest health problems in Indonesia. One cause of outbreaks of food poisoning occur due to eating processed food catering. This study aims to look at the overview of hygiene and sanitation in food processing by using the HACCP approach. The study was conducted with descriptive research design to see the processing of food in catering "C" and to examine the quality of E. coli bacteria in three types of food. The results of the research show that the HACCP approach to food processing is still not meet the standards. It was also found E. coli bacteria in ayam balado and rendang sapi because of hygiene and sanitation practices due to lack of food.
H2S is dangerous compound that colorless and has smell like rotten egg. One of this compound source is produced from decomposition process in landfill. The most sensitive body system when exposed to H2S is respiratory system. This study aims to analyze the effect of H2S intake to respiratory symptoms at people living around the Cipayung Landfill. This study design uses cross sectional. Data collection was carried out by interview by questionnaire and measure H2S ambient at 9 poimts locate aroundd community settlements. The result were found intake of H2S associated with respiratory symptoms (p value=0,012; OR=10,5; CI 95%=1,25-88,02). The result of multivariat analysis were found H2S intake influence respiratory symptoms after controlled by duration living variable (p value=0,026; OR=6,78; CI 95%= 1,612-64,572). It needs to measure routine H2S ambient and ensure that concentration was safe as well as proper management efforts from City Government of Depok, Cipayung Landfill and related stakeholders in order to reduce the health risk problems to the people living around Cipayung landfill.
Street food (SF) is popular and loved by people around the world. Every day, as many as 2.5 billion people worldwide and millions of people in developing countries consume street food. In developing countries, SF generally prepares their food in open spaces with poor hygiene practices, inadequate sanitation infrastructure, and a lack of clean water. Many countries reported food contamination by E. coli, including India, Indonesia, Ethiopia, Mexico, Philippines, China, and Sudan. These countries are associated with poor sanitary hygiene. This study aims to analyze the relationship of sanitary hygiene (food ingredients, cooked food storage, equipment, and personal hygiene of food handlers) with Escherichia coli contamination on street food in developing countries. The study design used in this research is a systematic review using the PRISMA method, analyzed by narrative synthesis on 10 works of literature, with details of 9 journals and 1 thesis published between 2012 and 2021. Based on the review result, all literature was conducted in Indonesia, using a cross-sectional study design, and only 1 literature whose instrument was tested for reliability. Most of them use reference journals, books/modules/dictation, and regulations/official publications of relevant agencies. The variable that is widely studied is the personal hygiene of food handlers. The conclusion in this study, on food ingredients the problems found are the open storage and the use of unlicensed food ingredients. The problem with cooked food storage is that the food is stored in open containers. On the equipment variables, the researcher found that they rarely washed and the absence of specific storage. For the personal hygiene of food handlers, the problems are the lack of washing hands with soap, not using PPE, and bad habits, such as smoking, scratching limbs, sneezing, wearing jewelry, and not covering wounds
Warung Tegal is a type of stall that is often contaminated with E. coli bacteria. This study aimed to determine the relationship between food serving time of more than 6-8 hours with E. coli contamination in food at 51 Warung Tegal in Beji, Cimanggis, Sukmajaya, Depok City in 2024. This study used a cross sectional study design, conducted in June 2024. The number of samples was 51 food (chicken intestine) in Warung Tegal, and the respondents were all food handlers as many as 99 handlers. The results showed 36 (70.6%) food samples were contaminated with E. coli bacteria. The results showed a relationship between serving time (p-value 0.006), food storage (p-value 0.006), and food handler knowledge (p-value 0.031) with E. coli contamination. The role of food handlers is very important in improving the quality of food in Tegal Warung. There is a need for counselling and training on food hygiene and sanitation practices for owners, managers, and food handlers as an effort to prevent contamination of food in Warung Tegal.
