Abstrak:
Keracunan makanan menjadi salah satu masalah kesehatan terbesar di Indonesia. Salah satu penyebab kejadian luar biasa keracunan makanan terjadi karena mengkonsumsi makanan olahan katering. Penelitian ini bertujuan untuk melihat gambaran higiene dan sanitasi pada proses pengolahan makanan dengan menggunakan pendekatan HACCP. Penelitian dilakukan dengan disain penelitian deskriptif untuk melihat proses pengolahan makanan di Katering “C” dan meneliti kualitas bakteri E. coli pada tiga jenis makanan. Hasil dari penelitian dengan pendekatan HACCP menunjukkan bahwa proses pengolahan makanan masih belum memenuhi standar. Ditemukan juga bakteri E. coli pada jenis makanan ayam balado dan rendang sapi dikarenakan praktik higiene sanitasi makanan yang kurang.
Food poisoning is becoming one of the biggest health problems in Indonesia. One cause of outbreaks of food poisoning occur due to eating processed food catering. This study aims to look at the overview of hygiene and sanitation in food processing by using the HACCP approach. The study was conducted with descriptive research design to see the processing of food in catering "C" and to examine the quality of E. coli bacteria in three types of food. The results of the research show that the HACCP approach to food processing is still not meet the standards. It was also found E. coli bacteria in ayam balado and rendang sapi because of hygiene and sanitation practices due to lack of food.

Abstrak:
Disertasi ini adalah menggambarkan perubahan prevalensi balita stunting pada Kabupaten/Kota kategori membaik dan Kabupaten/Kota kategori memburuk di Indonesia dari tahun 2007 ke tahun 2013. Metode cross sectional studi, sampel yaitu 163 Kabupaten/Kota, sumber data sekunder Balitbangkes dan Kementerian Keuangan. Uji statistik t-test dan diskriminan. Hasil: perubahan prevalensi balita stunting pada 49 Kabupaten/Kota kategori membaik 30,1%, dan 114 Kabupaten/kota kategori memburuk 69,9%. Sembilan cakupan program kesehatan dan sosial pada Kabupaten/Kota kategori membaik yang memiliki perubahan lebih besar dari Kabupaten/Kota kategori memburuk yaitu prevalensi BBLR, cakupan penimbangan balita ≥ 4 kali, cakupan vitamin A, cakupan imunisasi lengkap, persentase ketersediaan air bersih, persentase pengelolaan sampah diangkut petugas kebersihan, persentase ketersediaan jamban keluarga, persentase cuci tangan pakai sabun, dan persentase KK pegawai negeri sipil. Lima cakupan program kesehatan dan sosial pada Kabupaten/Kota ketegori memburuk yang perubahannya tidak jauh berbeda dari Kabupaten/Kota kategori membaik yaitu cakupan ANC-K4, prevalensi KEK ibu hamil, prevalensi TB-Paru balita, indeks kapasitas fiskal, dan persentase KK pendidikan tinggi. Delapan cakupan program kesehatan dan sosial dengan akurasi perubahan prevalensi balita stunting pada Kabupaten/Kota kategori membaik 83,7% dan Kabupaten kategori memburuk 92,1% yaitu cakupan timbangan balita ≥ 4 kali, cakupan imunisasi lengkap, cakupan ANC-K4, persentase sampah diangkut petugas kebersihan, persentase ketersediaan jamban keluarga, persentase cuci tangan pakai sabun, indeks kapasitas fiskal, dan persentase KK PNS
This dissertation is describing changes in the prevalence of stunting toddlers the Regencies/ Cities category improves and deteriorates in Indonesia, from 2007 to 2013. Cross sectional study method, samples are 163 Regencies/Cities, secondary data source Balitbangkes and Ministry of Finance. T-test and discriminant statistical test. Results: changes in the prevalence of stunting toddlers 49 Regencies/Cities category improved 30.1%, and 114 Regencies/Cities category deteriorated 69,9%. Nine coverage of health and social programs the Regencies/Cities category improved which has a change greater than Regencies/Cities category deteriorated namely the prevalence of LBW, toddler weighing coverage ≥ 4 times, vitamin A coverage, complete immunization coverage, percentage of availability of clean water, percentage of waste management carried by janitors, percentage of availability of family latrines, percentage of hand washing with soap, and the percentage of family heads of civil servants. Five coverage of health and social programs in the Regencies/Cities category deteriorated, whose changes are not much different from the Regencies/Cities category improved namely ANC-K4 coverage, prevalence of less chronic energy in pregnant women, prevalence of toddler pulmonary TB, fiscal capacity index, and the percentage of family heads of higher education. Eight coverage of health and social programs with accuracy changes in the prevalence of stunting toddlers at the Regencies/ Cities category improved 83,7% and Regencies/Cities category deteriorated 92.1% namely toddler weighing coverage ≥ 4 times, complete immunization coverage, ANC-K4 coverage, percentage of waste management carried by janitors, percentage of availability of family latrines, percentage of hand washing with soap, fiscal capacity index, and the percentage of family heads of civil servants

Abstrak:
Tujuan penelitian ini adalah mengetahui kualitas higiene dan sanitasi pengelolaan makanan dan minuman di Rumah Sakit dr. Suyoto Pusat Rehabilitasi Kementerian Pertahanan. Desain penelitian ini menggunakan studi deskriptif yang dilakuakn di Rumah Sakit dr. Suyoto pada bulan Mei-Juni 2017. Subyek dalam penelitian ini adalah 25 orang pegawai unit gizi terdiri dari 1 penjaga gudang, 10 pengolah makanan, 11 pantry dan 3 ahli gizi di Rumah Sakit dr. Suyoto. Pengumpulan data menggunakan metode wawancara dan observasi. Hasil penelitian ini adalah Higiene sanitasi pengelolaan makanan di unit gizi RS dr. Suyoto Pusat Rehabilitasi Kementerian Pertahanan secara keseluruhan uji kelaikan fisik higiene dan sanitasi di unit gizi berdasarkan Permenkes RI No. 1906/Menkes/Per/VI/2011 kurang memenuhi syarat yaitu dengan nilai 68 dengan skor 73,91 % untuk kategori rumah sakit golongan B (pelayanan kesehatan) minimal nilai yang harus dimiliki adalah 83 dengan skor 92,20%. Penulis menyarankan agar Rumah Sakit dr. Suyoto melakukan pelatihan higiene sanitasi makanan terhadap penjamah makanan, membuat buku saku kesehatan penjamah makanan dan pengawasan prilaku cuci tangan penjamah makanan. Kata Kunci : Pengelolaan makanan dan minuman, Higiene dan sanitasi makanan, unit gizi The purpose of this research is to know the quality of hygiene and sanitation of food and beverage management in dr. Suyoto Ministry of Defense Rehabilitation Center. The design of this study using descriptive study conducted in the Hospital dr. Suyoto in May-June 2017. Subjects in this study were 25 employees of nutrition unit consisting of 1 warehouse keeper, 10 food processors, 11 pantry and 3 nutritionists in dr. Suyoto. Data collection using interview and observation method. The result of this research is hygiene sanitation management of food in unit nutrition dr. Suyoto Ministry of Defense Rehabilitation Center as a whole test of physical toughness of hygiene and sanitation in nutrition unit based on Permenkes RI. 1906 / Menkes / Per / VI / 2011 less fulfilling the requirement that is with value 68 with score 73,91% for category hospital B class (health service) minimum value that must have is 83 with score 92,20%. The authors suggest that the Hospital dr. Suyoto undertook food hygiene sanitation training to food handlers, made a handbook of health food handlers and supervision of hand-washing behavior of food handlers.
